Mexican Breakfast Wraps
This is a great way to start the day
Equipment
- Frying Pan
- Knife
- Chopping Board
Ingredients
- 1 Red Pepper
- 1 Yellow or Green Pepper
- 1 Potato
- 1 Red Onion (or white)
- 1 Tin Heinz Beans
- 1 Packet Fajita seasoning
- 1 Packet Wholemeal tortilla (or other round thing bread)
- 1 Bottle Tabasco sauce (optional)
Instructions
- Peel the potato and dice into cubes. To speed things up you can put in a microwave container cover with water and zap for 6 minutes. When the microwave pings take out and discard the water (or let it cool and use it for your plants)
- Turn on the frying pan (medium heat) and add a little oil. Place the microwaved potato in the pan and cook
- Chop up the onion and peppers. After 5 minutes add to the potato
- Stir occasionally and add the Fajita seasoning (you don't need to add it all, about 1/4 packet)
- When the vegetables look part cooked turn down the heat and pour in a tin of beans
- After a couple of minutes stir gently and turn off the heat. The beans should be warm now and the "bean juice" will have picked up the Fajita seasoning
- Heat up the wholemeal tortilla – its usually about 20 second in a microwave
- Depending on who is eating this you can add more spice.
- Put the frying pan on a chopping board and you can serve straight away. Tuck in!
