    Forum Description

    Mexican Breakfast Wraps

    This is a great way to start the day

    • 1 Red Pepper
    • 1 Yellow or Green Pepper
    • 1 Potato
    • 1 Red Onion (or white)
    • 1 Tin Heinz Beans
    • 1 Packet Fajita seasoning
    • 1 Packet Wholemeal tortilla (or other round thing bread)
    • 1 Bottle Tabasco sauce (optional)
    1. Peel the potato and dice into cubes. To speed things up you can put in a microwave container cover with water and zap for 6 minutes. When the microwave pings take out and discard the water (or let it cool and use it for your plants)

    2. Turn on the frying pan (medium heat) and add a little oil. Place the microwaved potato in the pan and cook

    3. Chop up the onion and peppers. After 5 minutes add to the potato

    4. Stir occasionally and add the Fajita seasoning (you don't need to add it all, about 1/4 packet)

    5. When the vegetables look part cooked turn down the heat and pour in a tin of beans

    6. After a couple of minutes stir gently and turn off the heat. The beans should be warm now and the "bean juice" will have picked up the Fajita seasoning

    7. Heat up the wholemeal tortilla - its usually about 20 second in a microwave

    8. Depending on who is eating this you can add more spice.

    9. Put the frying pan on a chopping board and you can serve straight away. Tuck in!
