LET’S MAKE SILKEN TOFU AND MAPO TOFU (spicy Sichuanese dish)

We will be making silken tofu from scratch and Chinese mapo tofu.  It’s a spicy dish from the Sichuan province of China.

Let’s make silken tofu from scratch and prepare the spicy Sichuanese dish, the famous mapo tofu.

So what is tofu? Tofu is made of soybeans and a natural coagulant such as gypsum or nigari.  The coagulants work with the proteins of soybeans to form curds, just like cheese.  Once the tofu is set, you can use it to make whatever dish you please.                       

We will be making Chinese mapo tofu.  It’s a spicy dish from the Sichuan province of China and usually consists of soft tofu and a semi-spicy sauce made from fermented broad beans and chilli.  We will be using lentils in our mapo tofu to substitute for the ground meat usually added.                                                                

 In our Tofu Masterclass, you’ll learn how to:

🍲 Make silken tofu from scratch

🥕 Prepare a delicious plant-based version of mapo tofu using the classic Chinese douban chilli bean paste and our own freshly made tofu.

👩‍🍳 Our classes are interactive allowing for an in-depth hands-on experience

When we say let’s cook together we mean it! This is meant to be an interactive class with constant feedback from our instructor and questions from the class.

> List of ingredients will be shared at least 5 days in advance

> We will tell you what to prepare before the start of the session

> The session should be 2 hours max

Specific ingredients and Equipment

We will need:

> Soybeans

> Gypsum powder or epsom salt

> High speed blender

> Nut Milk bag or cheesecloth

> Steamer or pot with steamer insert

Christina Ng, author of Vegan Dim Sum, is a culinary-trained teacher and food stylist based in London. She regularly shares vegan cooking videos on Youtube under the name East Meets Kitchen

The pricing:

This sessions is on per donation basis (suggested amount: 20 pounds or 10 pounds for people with concession rates). We are offering this course with the option for you to select how much you want to donate. No matter how much you pay, you’ll be getting the same course as everybody else. We simply trust that people are honest and will support our mission to support and employ vulnerable women in our kitchen to earn income

The cancellation policy

We understand that plans may change especially with the current environment. However, preparing a class, even on zoom, requires planning.

Should you want to cancel:

  • Up to 48 hours before the class: full refund or change for another class/date
  • Less than 48 hours before the class: half of the donation would be discounted to your next class with us

The Zoom Link will be sent to the participants.
