Two states in Mexico claim to be the original creators of ‘salsa de mole’: Puebla (mulato pepper) and Oaxaca (land of the seven moles) According to culinary historians the most acclaimed moles are native to these two states. ‘Mole’ is considered a national dish in Mexico, and variations of mole sauces reflect ingredients available, and cultural traditions by region.
Traditional ‘mole’ sauce recipes can be extensive, and ingredients reflect their region of origin. Some may include twenty to thirty, different ingredients. A hearty mole sauce includes broth, assorted vegetables, warm spices, roasted nuts, and seeds. Also, some type of fruit, tortillas, and chocolate, all slowly simmered down, puree, with choice of chili peppers as the heart of the dish.
I will also show you step by step, how to make roasted chicken to serve with the ‘mole’ sauce, and roasted zucchini for vegetarian/vegan option. And we’ll plate the ‘mole’ with choice of tortillas, white rice and brown rice/quinoa and a “special” slaw.
To complete this scrumptious Valentine’s Day Dinner, for dessert we’ll make a Honey balsamic berry medley with homemade mint-chocolate whipped cream.
