Cooking with Mira: Valentine’s Day Dinner/Express ‘Mole’

February 12, 2021 @ 6:30 pm - 8:00 pm EST

Cooking with Mira: “Valentine’s Day Dinner”
Celebrate Love while cooking a scrumptious “Mole” sauce!
Express ‘Mole’ Sauce

Express ‘Mole’ Sauce

Two states in Mexico claim to be the original creators of ‘salsa de mole’: Puebla (mulato pepper) and Oaxaca (land of the seven moles) According to culinary historians the most acclaimed moles are native to these two states. ‘Mole’ is considered a national dish in Mexico, and variations of mole sauces reflect ingredients available, and cultural traditions by region.

Traditional ‘mole’ sauce recipes can be extensive, and ingredients reflect their region of origin. Some may include twenty to thirty, different ingredients. A hearty mole sauce includes broth, assorted vegetables, warm spices, roasted nuts, and seeds. Also, some type of fruit, tortillas, and chocolate, all slowly simmered down, puree, with choice of chili peppers as the heart of the dish.

During class, you’ll learn how to make, and customize, an “express” version of a hearty ‘mole’ sauce, packed with deep wholesome flavors.

I will also show you step by step, how to make roasted chicken to serve with the ‘mole’ sauce, and roasted zucchini for vegetarian/vegan option. And we’ll plate the ‘mole’ with choice of tortillas, white rice and brown rice/quinoa and a “special” slaw.

To complete this scrumptious Valentine’s Day Dinner, for dessert we’ll make a Honey balsamic berry medley with homemade mint-chocolate whipped cream.

Lifestyle diseases are caused by sedentary routines, excess of highly processed foods, sugars, and unmanaged stress.

What experts are saying about adding more herbs and spices to meals…

Traditional and functional medicine practitioners agree that adding plant based, wholesome ingredients, and regular exercise are effective ways to support medical treatments and overall health.

Monica Auslander Moreno, University of Miami adjunct professor and dietitian for the Miami Marlins, shared 3 reasons why she advocates for the use of more herbs and spices in homemade foods.

  1. “Herbs and spices make food tastier and boost health”.
  2. “Herbs and spices fight inflammation and reduce damage to your body’s cells”.
  3. “Herbs and spices are packed with healthful plant chemicals (phytochemicals)”.
